Foodmaker, Inc., is the operator and franchisor of Jack in the Box restaurants, the fifth-largest fast-food hamburger chain in the United States. Jack in the Box had evolved from a car hop restaurant opened in 1941 as Topsy's Drive-In. Over the next several years, as the drive-in restaurant concept began to enjoy increasing popularity, Topsy's Drive-In was expanded to four locations and renamed Oscar's, then renamed Jack in the Box in 1950, when its first drive-through unit was opened in San Diego. The chain expanded to 24 units by 1961 and to 182 units by 1966, the year that Foodmaker, Inc., was established.

Beef Tacos

Jack in the Box Copycat Recipe

Makes 12

1 lb ground beef
1/3 cup refried beans
1/4 teaspoon salt
2 tablespoon chili powder
1/4 cup mild taco sauce
12 soft corn tortillas
3 cups cooking oil, Crisco brand
6 slices American cheese
1 head lettuce, chop fine

Brown the beef over low heat, use a wooden spoon to chop and stir the meat. When the beef is brown drain the fat. Add the refried beans and use the wooden spoon to mash the whole beans into the mixture to create a smooth texture. Add the salt, chili powder and 2 Tbs of taco sauce to the mixture. Remove from the heat. In another skillet heat 1/4 inch of oil until hot.

Spread 1/2 of the beef mixture on the center of each corn tortilla. Fold the tortillas over and press so that the beef filling holds the sides together. Drop each taco into the pan of hot oil and fry on both sides until crispy. When cooked remove the tacos from the oil and place them on a rack or some paper towels until they cool. Slightly pry open add 1/2 slice American cheese and some lettuce. top with about 1/2 teaspoon of the remaining taco sauce.

Sirloin Swiss & Grilled Onion Burger

What's on it?  A larger burger patty with melted Swiss cheese, grilled onions, lettuce, tomato, pickle strips and peppercorn mayonnaise sauce on a bakery style bun.  To make this at home get yourself some good quality beef to make the patties and splurge on some nice big buns, not those little prepacked things in the bread aisle.

Serves 4

1 small red onion, chopped
1 tablespoon olive oil
1 1/4 teaspoons salt, divided
1/2 cup mayonnaise
1/2 teaspoon whole peppercorns, crushed
1 1 /2 pounds ground beef
4 kaiser rolls, split and toasted
Swiss cheese slices
tomato slices
lettuce leaves
pickles slices

Place onion on a greased baking sheet. Drizzle with oil and sprinkle with 1/4 teaspoon salt; toss to coat. Bake at 400 degrees for 8-12 minutes or until tender. Cool slightly. In a small bowl, combine the mayonnaise, crushed peppercorns and onion mixture; set aside.

Sprinkle beef with remaining salt; gently mix. Shape into four patties. In a large skillet, cook patties over medium heat for 6-8 minutes on each side or until a thermometer reads 160 degrees and juices run clear. Add cheese and allow to melt. Serve on rolls with mayonnaise mixture and, if desired, tomato and lettuce and other ingredients.

Jumbo Jack Burger

Jack in the Box Copycat Recipe

Makes 1 Sandwich

I suggest using factory frozen 1/4 pound beef patties from your grocers

1 sesame seed hamburger bun
2 tomato slices
chopped white onion
2 dill pickle slices
2 large lettuce leaves

1 tablespoon of mayonnaise
1/8 teaspoon lemon juice
dash onion powder
dash sugar

Cook: Preheat an electric griddle to 400 degrees .Toast your buns by laying face down on the griddle for about a minute. Set aside. Cook the still frozen beef patty 4−5 minutes per side, salting liberally before and after turning.

Top Bun:  Half of the mayonnaise sauce 1 tablespoon chopped, white onion 2 dill pickle slices 2 lettuce leaves 2 tomato slices

Bottom Bun:  Spread the remaining mayo sauce evenly. When the burger is finished cooking, drain the fat, and apply to the dressed top bun. Add the dressed bottom bun.

Mini Sirloin Burgers

Jack in the Box Copycat Recipe

1 lb. ground sirloin
1 teaspoon black pepper
1/2 teaspoon seasoned salt
1/2 onion sliced thin
4 slices American cheese
6 to 8 pickle slices
1 tablespoon peanut oil

Combine ground sirloin, seasoned salt, and ground pepper.  Mix well.  Slice onion thinly and place into a skillet with peanut oil.  Grill onions slowly, do not brown onions.  When the onions are almost translucent make 6 to 8 hamburger patties, make them thick (about 1/2 inch), and place into hot pan.

Grill hamburgers for 4 to 5 minutes before turning them.  Flip hamburgers, and remove onions.  When hamburger patties are done assemble them with. Bottom bun, pickle, meat patty, cheese, grilled onions, and then ketchup.
